Nielsen-Massey Lemon Extract for Baking & Cooking, 2 oz — Pure California Oil, Non-GMO Kosher

Nielsen-Massey Pure Lemon Extract is a concentrated, all-natural lemon flavor made from California lemon oil, designed to replace fresh juice and zest in recipes without losing bright citrus character.

This 2-ounce bottle delivers clean, intense lemon aroma and flavor for baked goods, sauces, frostings, drinks, and savory dishes. Crafted by a family-owned company with a long culinary heritage, the extract is produced from premium lemon oil and formulated to be non-GMO, allergen-free, kosher, and gluten-free. It stores easily and gives you reliable lemon flavor year-round, whether you want to streamline prep or boost a recipe’s citrus notes.

How much extract should I use instead of fresh lemon?

The extract is concentrated, so you use far less than you would fresh juice or peel. Measure by small spoonfuls to achieve the tart, aromatic lift you want without adding extra liquid.

• 1/2 teaspoon extract = 1 tablespoon fresh lemon juice
• 1 teaspoon extract = 1 teaspoon lemon zest
• Start with half the recommended amount for subtle flavor, then adjust to taste

Will this work in both sweet and savory recipes?

Yes—this lemon extract is versatile enough for pastries, glazes, custards, marinades, and dressings. Because it provides aroma and acidity without extra liquid, it’s especially handy in batters and icings where moisture balance matters.

• Add to cookie dough, cake batters, and frostings for bright citrus notes
• Stir a drop into vinaigrettes or pan sauces for a lifted finish
• Use in cocktails and nonalcoholic drinks for consistent lemon flavor

How is this extract made and what quality standards apply?

The extract is produced from lemon oil sourced from California, chosen for its fresh, lively citrus character. Nielsen-Massey applies strict ingredient selection and processing practices to deliver a pure flavor without artificial additives.

• Made from high-quality California lemon oil for authentic aroma
• Non-GMO Project Verified, allergen-free, and kosher-certified
• Packaged in a small bottle to protect flavor and extend shelf life

How should I store and use the 2-ounce bottle to get the most out of it?

Keep the bottle tightly capped in a cool, dark cupboard away from direct heat or light to maintain potency. Because the product is concentrated, the 2-ounce size lasts a long time for home cooks and small-batch bakers.

• Store upright in a cool pantry or spice cabinet away from sunlight
• Cap securely after each use to preserve aroma and prevent evaporation
• Use a pipette or measuring spoon for accurate, spill-free dosing

Who is this for: Home bakers, pastry chefs, bartenders, and home cooks who want dependable, bright lemon flavor without the hassle of zesting or juicing. It’s ideal for anyone seeking a shelf-stable, concentrated citrus extract that’s certified kosher, gluten-free, and free from common allergens—perfect for holiday baking, everyday desserts, and culinary experiments where precise flavor control matters.
