Sold as 3.5 oz / 100 g of loose leaf, this tea is intended for attentive brewing—use a fine-mesh infuser and an airtight container for storage to preserve aroma and flavor.
Extended steaming reduces the leaf’s fibrous texture and releases more soluble components, giving the liquor a saturated green color and a round, savory profile. Bitterness is generally lower when brewed at the recommended temperature and time, while sweetness and umami become more prominent.
For a clear, sweet cup, measure about 8 g of leaves per 200 ml of water and use water around 80°C (176°F). Steep briefly—40 to 50 seconds—then strain; this yields a smooth, umami-forward taste with minimal bitterness.
